This month, we’re naming one of Nashville’s famed barbecue pitmasters, Pat Martin, a Nashville Rockstar. Pat Martin’s barbecue career began from a bad day. Not too long ago, about 8 years, Pat Martin owned a lawn mowing company. One day he flipped the truck destroying all of his equipment. After collecting the insurance, he set out to have a nice plate of brisket tacos from a Mexican restaurant he knew in Nolensville. He arrived and all the lights within the restaurant were turned off. Then, he walked downstairs to hear from the owner that the restaurant had shut down. Martin asked what they would do with the building. Owner said, “sell it,” and Martin quickly replied, “I’ll take it.” And just like that, Martin’s Bar-B-Que Joint was born.
Since that day, Martin’s Bar-B-Que Joint has been seen on the Food Network, Travel Channel, Cooking Channel, and The Today Show. Over the years, Pat Martin has opened up four additional stores. That includes the most recent location in SoBro which features a beer garden, open patio, games, and more. Each store, under Pat Martin’s leadership, cooks everything, in-store, daily. They don’t even have a refrigerator or microwave. Seriously. The goal for each Martin’s Bar-B-Que Joint is to sell every single item they cook that day. It seems like a daunting task, but one bite of the slow roasted goodness and you will see why it seems to be easy for them.
Nowadays, Pat Martin spends his time taking care of the stores and traveling the country spreading the art of slow roasting to all. From big grill outs in New York to the Music City Food + Wine Festival in Nashville. In fact, he has started classes for those looking to get into the craft of slow roasting in hopes to keep the art alive.
