114. Nashville Rockstar – John Lasater


Time for another Nashville Rockstar. This time we’re heading inside a Music City kitchen to introduce you to the man behind the spice blend of Hattie B’s Hot Chicken, Mr. John Lasater. His work as Executive Chef & Director of Operations at Hattie B’s Hot Chicken has propelled Nashville’s staple cuisine to a national level and also provides some of the best flavored hot chicken known to the universe. And while he might not write songs or play an instrument, it doesn’t stop people from singing their praises for his spicy poultry. This fact alone makes him a perfect Nashville Rockstar.

John Lasater graduated from the French Culinary Institute in New York and has worked at several Nashville restaurants including Capitol Grille in Hermitage Hotel, Flyte World Dining & Wine, and Porter Road Butcher before joining the Hattie B’s Hot Chicken team inHattie Bs 2 highres 2012. It took him six months to create the spice levels you enjoy today. He worked with dry rub, brown sugar, paprika, chili powder, salt, pepper, and more until he finally got it right. Now, what’s truly amazing is his consistency. His basic understanding to have each level of heat constant on a daily basis is what have people coming back more and more. That way no matter what you order, or on what day, you are sure to have the same taste as the last time. With these facts and attention to detail it’s no wonder Forbes had this to say about him in their “30 Under 30” article: “His Hattie B’s has changed the way hot chicken is viewed in the South”. We couldn’t agree more.

Now a days it’s hard to go to Hattie B’s Hot Chicken and not see a line at their store in Midtown. They opened up a new shop about over a year ago on Charlotte Avenue and the place always seems busy. Now, they are expanded to Birmingham. Growth is a sign of something great. Of something that is being appreciated from everyone and it is due largely to the efforts by John Lasater.
